Italy
After the great food nation of France, time for another great food culture: Italy. We actually spent almost the whole day on the beach, the summer having finally arrived in Copenhagen, so I was kind of tempted to do a quick pizza when we got home. However, we had many very delicious sounding suggestions for Italy and youngest especially was keen to try making our own home made pasta (in spite of us not having a pasta machine), so after fortifying myself with many glasses of ice water, we set to work.
We settled on the legendary cacio e pepe recipe, with antipasti and ensalata caprese to start, but first we had to make the pasta. This was a helpful guide, we used a high protein wheat flour that worked very well (https://www.kitchensanctuary.com/homemade-pasta/). We cut the rolled out dough into half cm strips of tagliatelle and then put them to boil in a saucepan while preparing oil and pepper and pecorino for the cacio e pepe.
It worked out even better than I could have imagined. Rich, creamy, hearty and peppery, macaroni cheese for grown-ups basically.
Definitely going to make cacio e pepe again and I'm also even contemplating getting a pasta machine. Fresh home made pasta was really delicious and definitely added something to this dish.
