Greece was actually obvious for me. Spanakopita and greek salad, what could be better and fresher on a warm summer evening? With a dessert of Greek baklava filled with chopped nuts and thin honey, after the recipe of a Greek colleague's mother.

Absolutely perfect summer food.

And for dessert an easy version of Greek baklava, made with walnuts and cinnamon, unlike Turkish which tends to be made with pistachios, I gather. We did cheat slightly with buying filo pastry rather than making it..
